Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound penne 1/3 cup extra-virgin olive oil 2 garlic cloves -- minced 1 pound fresh spinach -- coarsely chopped salt 1/4 teaspoon hot red pepper flakes -- or to taste 1/2 cup raisins 1/4 cup pine nuts The raisins add a sweet counterpoint to the rest of the dish, especially the touch of hot red pepper. Including raisins and other sweet ingredients in savory recipes is a delicious Sicilian tradition. Adjust the amount of hot pepper flakes used according to personal preference. Cook the penne in a large pot of salted boiling water, stirring occasionally, until it is al dente, about 8 to 10 minutes. While the pasta is cooking, heat 1 tablespoon of the oil in a large skillet over medium heat. Add the garlic, spinach, salt to taste, and red pepper flakes. Cook until the spinach is tender, about 2 to 4 minutes. Add the raisins and pine nuts, and keep warm over low heat. When the pasta is cooked, drain it and place in a large serving bowl. Add the spinach mixture and the remaining oil, and toss to combine. Serve immediately.
