Guest guest Posted December 7, 2001 Report Share Posted December 7, 2001 * Exported from MasterCook * Vegetable Quiche (Main Dish) Recipe By : The Cooking Cardiologist, by Richard Collins, page 127 Serving Size : 6 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup red Bermuda onion -- sliced 1/8 " thick 10 ounces asparagus tips -- thawed 15 ounces canned carrots -- julienne 10 ounces Egg Beaters -- (egg substitute) 1/3 cup lite soy milk 2 tablespoons all-purpose flour 1/4 cup shredded fat-free Parmesan cheese 1 teaspoon Italian seasoning Serving size: 6 In a 2 quart casserole dish, combine onions and asparagus. Cover. Microwave on high 4-5 minutes. Add drained carrots. In a small mixing bowl combine the remaining ingredients. Mix together the egg mixture with the vegetables. Pour into a Low Fat Quiche Crust. (See separate recipe.) Bake in a 350 degree oven 45-60 minutes until set.
