Vegetable Bake

1 eggplant

3 zucchini

2 onions

4 tomatoes

1 slice fat-free cheddar cheese

16 ounces canned crushed tomatoes

 

Serving size: 4

 

Preheat oven to 350 degrees. Cut all vegetables in round thin

slices. Spray a 9x12x2 inch baking dish with cooking spray. Layer

vegetables, then cheese slices. Continue layering, ending with

cheese. Pour crushed tomatoes over the entire casserole. Cover with foil

and bake 1 hour.

Protein 15, Sodium 759.
