Cut all vegetables in round thin slices. Spray a 9x12x2 inch baking dish with cooking spray. Layer vegetables, then cheese slices. Continue layering, ending with cheese. Pour crushed tomatoes over the entire casserole. Cover with foil and bake 1 hour. Nutritional analysis.
