Peanut Butter Cookies

Amount Measure Ingredient -- Preparation Method

2 teaspoons vanilla

1/4 cup amasake

1 cup FruitSource sugar

1 tablespoon canola oil

1 cup chunky peanut butter, unsalted -- and unsweetened

1 1/4 cups whole wheat pastry flour

1/2 teaspoon baking powder

3/4 teaspoon baking soda

1/4 teaspoon salt

 

Add vanilla to amasake in a bowl and then add sugar and let sit 5 minutes,

stirring occasionaly.

 

Mix oil and peanut butter and add to sugar mix.

 

Combine rest of ingredients in a larger bowl.

 

Mix liquid ingredients into flour mix.

 

Chill dough.

 

Preheat oven to 375F.

 

Roll into large walnut sized balls.

 

Place cookies on parchment covered cookie sheet.

 

Dip fork in flour and imprint lattice patterns on each cookie.

 

Bake till light finger pressure rebounds, 10-15 minutes (even 18 minutes, if

dough very chilled).

 

Variatioin

Substitute almond or cashew nuts.
