Crepes Suzette

Amount Measure Ingredient -- Preparation Method

1/2 cup whole wheat flour

1/2 cup unbleached flour

1 cup amasake or soy milk

1 teaspoon arrowroot

1/4 teaspoon salt

1/4 teaspoon nutmeg

1 tablespoon apple juice -- or Cognac

4 ripe bananas -- diced

4 tablespoons canola oil

4 tablespoons maple syrup

6 tablespoons marmalade

1 tablespoon Cointreau

2 tablespoons fresh orange juice

 

Heat flour in a dry skillet over medium heat until golden and fragrant.

 

Whisk flours, arrowroot, salt, nutmeg, and apple juice.

 

Let stand one hour at room temperature.

 

Meanwhile, fry bananas in half the oil and syrup, about 2 minutes.

 

Stir marmalade, Cointreau, and lemon juice into banana mix.

 

With 1 teaspoon oil heated in a small skillet on medium heat, pour enough batter

to thinly cover skillet and fry till golden, 1-2 minutes each side.

 

Place mix on the dough and roll into cigar shapes.

 

Sprinkle with remaining maple syrup and broil 1-2 minutes.
