Cumin-Flavored Spinach Fritters

Amount Measure Ingredient -- Preparation Method

1 pound fresh spinach

2 large eggs

1/4 cup chopped scallions

1/2 teaspoon ground cumin -- or to taste

1 dash hot pepper flakes -- or to taste

1 teaspoon salt -- or to taste

freshly ground pepper

1/3 cup matzoh meal (about)

vegetable oil (for frying)

 

Wash the spinach thoroughly and cook just in the water clinging to the

leaves, over medium heat, for 5 minutes. Drain well, pressing to squeeze

out the excess moisture, and chop.

 

Beat the eggs and mix with the spinach and scallions. Stir in the cumin,

pepper flakes, salt, pepper, and just enough matzoh meal to hold the

fritters together.

 

Heat about 2 inches of oil to 375 degrees or until it starts to shimmer.

With your hands shape the batter into ping-pong-size balls and carefully

drop them into the hot oil a few at a time. Do not crowd the pan. brown

a few minutes on all sides until crisp.

Drain well on paper towels. Repeat with the remaining batter. Serve hot

or at room temperature.

 

Makes 8-10 fritters.
