Guest guest Posted December 5, 2001 Report Share Posted December 5, 2001 * Exported from MasterCook * Spelt Patties with Almonds Recipe By :Dopp, Willrich, Rebbe Serving Size : 4 Preparation Time :0:00 Categories : Grain And Cereal Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 1/2 ounces spelt -- divided 7 tablespoons green spelt 3 cups low sodium vegetable broth 1 red onion 1 bunch Italian parsley 1 bunch fresh basil 3 1/2 ounces button mushrooms 1/3 cup chopped almonds 2 tablespoons olive oil -- cold-pressed, divided 1 tablespoon olive oil if needed for frying salt and black pepper 1/2 cup freshly grated Parmesan cheese 1. BATTER: Crush 2.5-oz spelt and the green spelt fine and grind the rest of the spelt to flour. Bring the broth to broil, add both types of spelt and cook over low heat, stirring for 5 minutes. Remove from heat and let stand, covered, for 20 minutes. 2. Meanwhile, peel onion. Wash parsley and basil and chop the leaves fine. Wash mushrooms, trim and dice fine. 3. Heat an ungreased frying pan and toast the almonds until golden; set aside. Heat 1-tablespoon olive OIL in the pan. Fry the onion over moderate heat until transparent, about 2 minutes. Stir in mushrooms and saute 3 minutes. Let cool. 4. Mix the almonds, parsley basil, salt, pepper and cheese into the batter. Form into 16 patties. Wipe out the frying pan, heat 1 tablespoon OIL in it and cook the patties in batches for 2 to 3 minutes per side, adding more OIL as needed. Serve hot. Description: " Fried nut veggie burgers.
