Guest guest Posted December 5, 2001 Report Share Posted December 5, 2001 did i post this one already? * Exported from MasterCook * Saint Lucy Soup Sicilian Style Recipe By :Victor D'Avila-Latourrette Serving Size : 8 Preparation Time :0:00 Categories : 12 December Filed Soups and Stews Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 quarts water 1 cup olive oil 1 pound whole-grain dried wheat -- such as faro 1 pound dried chickpeas 8 garlic cloves -- minced 2 large onions -- sliced 3 bay leaves salt and pepper -- to taste 1. Pour the water and oil into a large soup pot. Add the other ingredients and let it boil slowly, covered, for 3 or 4 hours, stirring from time to time. 2. Check the seasonings, remove the bay leaves, and serve the soup hot. Those who wish can sprinkle some Parmesan cheese into their bowls. VARIATIONS: Could use soft-white wheat berries, cracked or bulgur wheat; barley, rice, orzo. She was born of noble parents near Syracuse, and when she refused to marry a pagan young man, he denounced her as a Christian to the authorities. Sentenced to a brothel, she was made miraculously immobile. Several attempts were made to kill her, including once by fire, but the flames refused to touch her. Finally she was stabbed to death through the throat. Saint Lucy is much loved by the Sicilian people, who often give her name to their baby girls. She is also invoked by people who suffer eye trouble: Legend has it that her own eyes were torn out but miraculously restored. Nutr.
