Guest guest Posted December 5, 2001 Report Share Posted December 5, 2001 * Exported from MasterCook * Banana Pancakes Recipe By :Steven Ferry & Tanya Petrovna Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 1/4 cups water 1 1/4 cups unbleached white flour 1/2 cup whole wheat pastry flour 1 teaspoon sea salt canola spray 1 cup coconut milk 1/3 cup maple syrup 3 ripe bananas -- thinly sliced Whisk water, salt, and flour together to make a thin batter. Heat on medium and lightly spray a 9-inch skillet. Pour 1/3 cup batter into skillet; cook 1-2 minutes on each side until golden. Repeat for remainder of batter. Stach crepes on a warm plate until all are done. Combine coconut milk and maple syrup, whisking thoroughly. Roll sliced bananas into the warm crwpes and drizzle with the coconut and maple syrup.
