Spicy Hot Chili Rice

Amount Measure Ingredient -- Preparation Method

2 cups cooked rice

15 ounces canned fat-free vegetarian chili

3/4 cup V-8 vegetable juice

1 teaspoon chili powder -- more if you like

3 cups frozen mixed vegetables -- thawed

1 cup frozen corn -- thawed

1 bunch green onions -- sliced

4 tablespoons fat-free sour cream

1 cup fat-free shredded cheddar cheese

 

Serving size: 4

 

In a large saucepan, combine chili, V-8 juice, mixed vegetables and

corn. Bring to a boil, cover and simmer over low heat until vegetables are

tender. Serve over prepared rice, top with sliced green onions, sour cream

and cheese.

 

Nutritional analysis: Calories 1329, Fat 0, Cholesterol 0, Carbohydrate 57,

Protein 21, Sodium 370.
