Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 8 ounces wid no-yolk egg noodles 2 cups nonfat cottage cheese 1 1/2 cups nonfat grated mozzarella cheese 20 ounces frozen chopped spinach -- thawed and squeezed dry 1/2 Edensoy Organic Soy Beverage 1 cup fat-free egg substitute salt and pepper -- to taste 1/4 cup grated fat-free parmesan cheese Cook the noodles al dente according to package directions. Drain and return to the pan. Add the remaining ingredients, except for the parmesan cheese, to the noodles, toss gently to mix. Spray an 8x12 inch baking dish with cooking spray. Transfer the noodle mixture to the dish, top with the parmesan cheese. Bake in a 350 degree oven for 45 to 50 minutes, or until the filling is set and the top brown. Insert a knife into the center of the kugel, it should come out clean. Let set for 5 minutes before serving.
