Peach Cobbler

Amount Measure Ingredient -- Preparation Method

2/3 cup amasake

2 teaspoons canola oil

2 teaspoons raspberry vinegar

1/2 cup FruitSource -- or maple syrup

6 tablespoons arrowroot

1 cup whole wheat pastry flour

1/2 cup unbleached flour

5/8 teaspoon salt

1 cup fresh fruit juice

1 1/2 teaspoons cinnamon -- plus one pinch

1/2 teaspoon nutmeg

2 1/2 quarts fresh or frozen peaches -- peeled, pitted, and sliced

 

In a mixing bowl, whisk amasake, oil, vinegar, and one tablespoon each of syrup

and arrowroot.

 

Mix flours and 1/2 teaspoon salt; pour liquid mix into flour and work to form

dough into ball; roll into a circle shape,, approximately 1/8 " thick. Set

aside.

 

Preheat oven to 425F.

 

In a 10-inch, deep baking dish, combine juice, spices, remaining arrowroot,

salt, and 1/2 cup syrup Place peaches in mix.

 

Cover with pastry and make a few vents. Mix remaining syrup with pinch of

cinnamon and brush over crust.

 

Bake 15 minutes and lower heat to 375F and bake another 45 minutes until crust

is lightly browned. Cover cobbler loosely with foil to prevent burning if

needed, removing last 15 minutes.

 

Serve hot or cold.

 

Variation

This recipe works well with any fruit.
