Sweet Potato Puffs

Amount Measure Ingredient -- Preparation Method

2 cups mashed sweet potato pulp

1 teaspoon cinnamon

1/4 teaspoon nutmeg

2 tablespoons granulated brown sugar

1/4 cup nonfat egg substitute -- liquid

3/4 cup cornmeal

1/4 cup cornmeal -- for rolling

cooking spray

sweet honey mustard sauce (optional) -- for dipping

 

Combine all ingredients except the cornmeal for rolling. For 18 two-inch balls.

Roll in cornmeal. Place on a cookie sheet sprayed with cooking spray.

 

Bake for 25 to 30 minutes at 350F.

NOTES : You can use either fresh or canned sweet potatoes. Fully cook the fresh

potatoes in advance. Cool to the touch. Cut out and mash the pulp, then

refrigerate until cooled.
