Guest guest Posted December 3, 2001 Report Share Posted December 3, 2001 baked fritter as appetizer... * Exported from MasterCook * Sweet Potato Puffs Recipe By :Jeanne Tiberio Serving Size : 6 Preparation Time :0:00 Categories : Appetizers Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups mashed sweet potato pulp 1 teaspoon cinnamon 1/4 teaspoon nutmeg 2 tablespoons granulated brown sugar 1/4 cup nonfat egg substitute -- liquid 3/4 cup cornmeal 1/4 cup cornmeal -- for rolling cooking spray sweet honey mustard sauce (optional) -- for dipping Combine all ingredients except the cornmeal for rolling. For 18 two-inch balls. Roll in cornmeal. Place on a cookie sheet sprayed with cooking spray. Bake for 25 to 30 minutes at 350F.
