Here's a recipe from his site that sounds delicious and would make a

great holiday gift.

Pumpkin Seed Brittle

3 cups sugar

1 1/2 cups water

3 cups hulled pumpkin seeds

- (these are the green ones)

1 tablespoon vegetable oil

1/2 teaspoon cayenne pepper

1/2 teaspoon cinnamon

1/4 teaspoon kosher salt

 

Heat a pan over medium heat and add the oil, pour in the seeds and

toast them while constantly moving them. You will smell their aroma

and hear some of them begin to crackle when they are toasted. Add the

cinnamon and cayenne and season with a little salt. Separately, stir

together the sugar and water in a saucepot. Cook over a medium-low

flame until the sugar dissolves stirring with the fork. Once the

sugar has dissolved, do not stir any more. Cook until the sugar is a

brown caramel color. All at once, stir in the seeds. This will

greatly reduce the temperature of the sugar so work quickly. Pour the

mixture onto a sheet pan lined with oiled foil or a silpat. Spread

thin using a spatula. Allow to cool then break into pieces. Sweet,

nutty and spicy.

 

Yield: 5 cups brittle

Cook time: 20 minutes plus cooling time
