citrus quinoa salad

You could add cooked cold quinoa to rice and other grains with diced carrot,

onion, celery etc for a quick stirfry. Add it to soup instead of pasta or rice.

Citrus Quinoa Salad

Amount Measure Ingredient -- Preparation Method

1 cup quinoa -- (250 mL)

2 cups orange juice -- (500 mL)

1 cup diced cucumber -- (250 mL)

1 red bell pepper -- diced

1/2 cup diced red onion -- (125 mL)

1 cup diced celery -- (250 mL)

1/2 cup diced carrot -- (125 mL)

1/4 cup chopped fresh cilantro (leaf coriander) -- (50 mL)

3 tablespoons chopped fresh mint -- (45 mL)

2 tablespoons extra virgin olive oil -- (25 mL)

Salt and freshly ground pepper

1 tablespoon toasted slivered almonds -- (15 mL)

 

Using a sieve, rinse quinoa with water. (See notes)

 

Combine quinoa and orange juice in a saucepan; bring to a boil over medium-high

heat. Reduce heat and simmer, covered, for about 12 to 15 minutes or until

liquid is absorbed; let cool.

 

Combine cooled quinoa with cucumber, red pepper, red onion, celery, carrot,

coriander, mint and olive oil.

 

Season with salt and freshly ground pepper. Garnish with slivered almonds. Makes

6-8 servings.

NOTES : Quinoa is an ancient grain (botanically it is the dried fruit of an

herb) of South American origin. Always rinse it well. Place uncooked quinoa in a

bowl and fill with cold water. Drain in a fine colander or sieve and repeat

several times. This is necessary to remove any saponin that may be remained on

the grain after processing. Saponin is a natural coating which if not removed

can taste bitter and soapy. Most comes off before the grain is packaged.
