French Toast

1/2 ripe banana

1 1/2 cups soy milk

2 teaspoons vanilla

4 tablespoons maple syrup

3 teaspoons cinnamon

1/4 teaspoon salt

grated zest of 1 orange

8 slices whole-grain bread

canola oil spray

maple syrup

 

Preheat griddle to 375F.

 

Puree first 7 ingredients in blender.

 

Place mix in a wide-bottomed bowl and immerse bread very briefly.

 

Grill 2-3 minutes each side on oiled griddle, until lightly browned.

NOTES : The French call their French toast, " pain perdu, " meaning " lost bread. "

It is made using stale bread which might otherwise go to waste--the same

rationale, surely, for England's bread and Butter Pudding. Your French toast

(and stale bread!) will no doubt taste better by following this tradition.
