Sisti Serving Size : 6 Preparation Time :0:00 Categories : Grain And Cereal Quinoa Salads and Dressings Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound quinoa 1 3/4 liters vegetable stock -- cold 1 red bell pepper -- grilled and peeled 1 green bell pepper -- grilled and peeled 2 green Anaheim chiles -- grilled and peeled 2 tomatoes -- peeled and seeded 4 ounces roasted peanuts -- divided THE DRESSING: 2 Fluid Ounces peanut oil 1 lime's juice 1 tablespoon white rum 5 tablespoons roughly chopped coriander pinch ground turmeric 1 clove garlic (optional) -- crushed 3 tablespoons chopped fresh flat-leaf parsley salt and black pepper 1. Finely dice the peppers. Dice the tomatoes. Roughly chop the peanuts. Rinse the quinoa thoroughly under cold water until the water runs clear. 2. In a large saucepan mix the quinoa with the stock, bring to the boil and simmer for about 8 to 10 minutes, or until the grains are translucent. Drain well and spread on a flat dish to cool. 3. In a large bowl for serving, mix the diced peppers, chiles, tomatoes and half the peanuts. 4. Combine the dressing ingredients in a blender or food processor and mix until thoroughly combined. 5. Add the cooled quinoa and dressing to the peppers and mix well. Season to taste with the salt and pepper, cover and chill. Before serving, sprinkle with the remaining peanuts.
