Mango Chutney

Amount Measure Ingredient -- Preparation Method

1 medium orange

3 medium apples

2 medium mangoes

1 lemon

1 medium onion

1 cup honey

1 cup cider vinegar

1 cup water

2 tablespoons fresh ginger -- finely chopped

1 teaspoon dried red chili flakes

1 teaspoon peppercorns

1 teaspoon allspice

1 teaspoon mustard seed

1 teaspoon whole cloves

1 teaspoon celery seed

3/4 cup raisins

 

Chop the fruits and onion into small pieces. Combine with honey,

vinegar, and water in a large saucepan. Tie the ginger and dried spices

in a square of cheesecloth, add to the pot, and cook 20 minutes. Add

raisins and cook until thick, 20 - 30 minutes. Remove spice bag. Soon

into half-pint jars, seal tightly, and store in the refrigerator for

several weeks or follow standard canning procedures and put up for the

pantry.

 

Yield: 4 half pints
