Garlic, Greens, and Grains with Feta

Amount Measure Ingredient -- Preparation Method

2 cups water

1 cup bulgur (uncooked)

1 tablespoon olive oil

1 medium onion -- diced

6 cloves garlic -- minced

2 bunches fresh spinach (about 2 pounds)

2 teaspoons low-sodium soy sauce

1 tablespoon dried basil

1 teaspoon nutmeg -- freshly grated

3/4 cup Feta cheese -- crumbled

 

Bring the water to a boil and stir in the bulgur. Bring back to a boil,

cover, reduce heat to low, and simmer 20 minutes. Without removing the

lid, allow to sit 5 minutes before combining with other ingredients.

 

Meanwhile, heat oil in a stockpot over medium-low heat. Saute the onion

and garlic for about 5 minutes, stirring occasionally, while you

carefully wash the spinach and tear it into bite-size pieces. Do not dry

them.

 

Quickly stir the soy sauce, basil, and nutmeg into the stockpot, then

pile in the spinach. Cover tightly and cook over low heat for 10

minutes, then stir to combine the spinach with the seasonings. Combine

spinach with cooked bulgur, then with feta. Serve very hot.

This dish actually never sees the inside of an oven, but its consistency

is very much that of a traditional casserole, so we have included it

with the casseroles. We have been enjoying versions of this dish

frequently for many years.
