Guest guest Posted December 2, 2001 Report Share Posted December 2, 2001 * Exported from MasterCook Mac * Quick and Simple Tomato Sauce Recipe By : Mindy Toomay & Susan Geiskopf-Hadler Serving Size : 1 Preparation Time :0:00 Categories : Sauce Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 pounds fresh plum tomatoes -- or 2 oz can low-sodium whole tomatoes -- drained 2 tablespoons olive oil 2 cloves garlic -- minced herbs, fresh or dried 1/4 teaspoon salt freshly ground pepper Blanch and peel the fresh tomatoes and chop coarsely. If using canned tomatoes, drain off the juice and reserve for another use, such as soup. Chop the tomatoes coarsely. Heat the oil in a heavy-bottomed skillet and stir and saute the garlic about a minute, then pour in the tomatoes all at once. Cook over medium-high heat, stirring frequently, about 5 minutes. The tomatoes will break apart and liquefy a bit. Add a tablespoon or so of minced fresh oregano or basil leaves, or a smaller amount of minced fresh rosemary or thyme. Any combination of the above is quite delicious. If using dried hers, begin with a teaspoon or so of oregano and/or basil, perhaps only 1/4 teaspoon of the stronger-flavored thyme and rosemary. Salt and pepper the sauce at this stage. Simmer about 10 more minutes over low heat, until a thick sauce consistency is achieved.
