Layered Casserole with Tofu, Eggplant, and Olives

10 ounces firm tofu

1 medium eggplant (about 1 lb)

3 zucchini (about 7 inches long)

6 slices oatmeal bread

1/4 teaspoon olive oil

1 medium onion -- chopped

2 cups tomatoes -- sliced

-- The Sauce --

1 can tomato sauce (15 oz, low-sodium)

1 tablespoon dried oregano -- crushed

3 cloves garlic -- minced

1 can black olives (drained, 4 1/4 oz)

2 tablespoons sherry

 

Preheat the oven to 350F. Drain the tofu and slice it 1/4 inch thick.

Place on a tea towel to drain off the excess water. Peel the eggplant,

discarding the stem, and cut it into 1/4-inch slices. Trim the ends off

the zucchini and slice lengthwise into 1/4-inch strips. Cut the crust

from the bread and set the bread aside.

 

Oil a 9x12-inch glass baking dish. Layer half the eggplant and then half

the zucchini slices. Sprinkle half the chopped onion over them, then top

with all of the bread slices and all of the tofu slices. Top this with

the tomato slices, the remaining chopped onion, eggplant and zucchini.

Set aside while you prepare the sauce. Mix the tomato sauce with the

oregano, garlic, olives, and sherry. Pour this sauce over the casserole

and bake, uncovered, for 50 minutes. Allow to cool for 5 minutes before

serving.
