Lemon Olive Salad

-- For Dressing --

1/2 cup green olives -- pitted

1/3 cup olive oil

1/3 cup lemon juice

-- For Salad --

lettuce and other greens

mushrooms

cucumber

dried tomatoes

feta cheese

 

In a blender or food processor, puree the olives. Add olive oil and

lemon juice and puree again. Toss 1 tablespoon per serving with salad

ingredients. This dressing will keep a long time in a covered jar in

the refrigerator, but bring it back to room temperature before using.

 

Dressing yield: 1 1/4 cups
