Guest guest Posted December 2, 2001 Report Share Posted December 2, 2001 * Exported from MasterCook Mac * Pizza Mediterraneo Recipe By : Mindy Toomay & Susan Geiskopf-Hadler Serving Size : 6 Preparation Time :0:00 Categories : Main Dish Pizza Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pizza crust (12-inch crust) 1 medium zucchini 2 ounces provolone cheese -- thinly sliced 1/4 cup red onion -- sliced paper-thin 1 can artichoke hearts (water-packed, 14 oz can) 2 tablespoons fresh oregano -- minced 2 ounces feta cheese -- crumbled freshly ground pepper Prepare pizza crust from Pizza Dough recipe or use a commercial crust for an Almost Instant pizza. Preheat the oven or outdoor grill to 450 degrees F. Remove the ends of the zucchini and cut it into very thin oblong slices. Lay the provolone slices out so that they cover most of the pizza crust (but leave about an inch at the edge free of toppings). Arrange the onion slices and the artichoke hearts on top of the onion. Distribute the minced oregano and the feta cheese over the top and grind on pepper to taste. Bake for about 15 minutes, until the crust is browning and the provolone is melted. Serve immediately.
