Uncle Ben's Harvest Rice

Amount Measure Ingredient -- Preparation Method

1 cup Instant Brown Rice

3/4 cup canned vegetable broth

1/2 cup water

1 tablespoon vegetable oil

1/3 cup thinly sliced carrot

1/3 cup chopped green onions with tops

2/3 cup apples unpeeled cored and chopped

4 teaspoons seedless raisins

1 teaspoon sesame seeds -- divided

1 dash salt

 

1. In a small saucepan bring vegetable broth and water to boil; add rice and

simmer 10 minutes. Remove from heat. Set aside.

 

2. In a small skillet, over medium-high heat, cook carrots until tender crisp.

Add onions and apples; cook 3 minutes.

 

3. Stir in rice, raisins, 1/2 teaspoon sesame seeds and salt. Cook, stirring

until thoroughly heated. Garnish with remaining sesame seeds.
