Satay with Peanut Sauce

8 ounces udon (or plain Chinese) noodles

6 tablespoons olive oil

4 4-ounce tempeh patties

1/4 cup vegetable stock -- beef style

1 medium onion -- thinly sliced

1 bunch bok choy -- sliced in 1/2 " pieces

1/2 teaspoon sea salt

2 cups Peanut Sauce

1 bunch scallions -- finely chopped

1 cup cilantro leaves

1 carrot -- shaved (optional

 

Cook udon noodles according to package instructions.

 

Heat 1/4 cup oil in skillet until hot; saute patties on medium high heat for 3-4

minutes each side, until golden. Pour on stock and let simmer until 1/2 of the

liquid has evaporated. Turn patties and continue to simmer until all liquid has

evaporated.

 

Let Patties cool, then slice into 1/4 " strips. Set aside.

 

Heat 2 tablespoons olive oil in skiller; add onion and saute until transparent

and lightly browned. Add bok choy stems and saute for one minute, then add

leafy parts and saute another 4-5 minutes. Add salt. Remove from heat.

 

Toss vegetable mix with cooked noodles. Arrange on serving dishes. Place

pattie strips on top, then drizzle peanut sauce on top. Garnish with chopped

scallions and cilantro. Arrange carrot shavings around plate for color.

Peanut Sauce

2 tablespoons olive oil

1/2 onion -- chopped medium

6 cloves garlic -- sliced finely

3/4 cup roasted peanuts

1 14 oz can coconut milk

1/4 cup maple syrup

1/4 cup rice vinegar

1/4 cup soy sauce

1 teaspoon red pepper flakes

 

Saute onion and garlic in oil until transparent.

 

Place onion and garlic mixture in a blender or food processor, together with

other ingredients. Blend thoroughly into smooth paste. Serve warm.
