Guest guest Posted December 1, 2001 Report Share Posted December 1, 2001 who's tried this kind of thing -- in a canning jar? * Exported from MasterCook * Banana Walnut Bread in a Gift Jar Recipe By :A CHEF'S TABLE with Jim Coleman Serving Size : 36 Preparation Time :0:00 Categories : Desserts Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Wet: 2 2/3 cup sugar 2/3 cup shortening 4 large eggs 2 cups mashed ripe bananas 2/3 cup water Dry: 3 1/3 cup all-purpose flour 1/2 teaspoon baking powder 2 teaspoons baking soda 1 1/2 teaspoons salt 1/4 teaspoon ground allspice 1/4 teaspoon ground cloves 1 teaspoon ground cinnamon Addition: 2/3 cup walnut pieces Blend together the sugar and shortening until creamy. Add the egs, bananas, water and mix until smooth. In a bowl mix together the rest the dry ingredients. Add the dry ingredients to the banana mixture. Add the walnut pieces and mix until well incorporated. Grease 8 pint jars and pour the banana mixture 1/2 way up the jar. Clean the jar rims of any batter. Bake uncovered in a pre-heated 325F oven for about 45 minutes or until a toothpick comes out clean. Place the lid and rings on the jars right away. As the jars cool the lids should seal. Test by pressing down on the lid and if it does not move it is sealed. If it does move you can keep it in the refrigerator for up to a week. The sealed jars will last in the pantry up to 5 weeks.
