This would go well with Eggplant Parmesan Casserole, Confetti Rice and Vegetables, or Bulgur Pilaf with Garbanzo Beans, (see separate recipes). Place carrots, pineapple, butter, orange juice, and brown sugar in the slow cooker. Cover and cook on high for 2 to 3 hours, until carrots are tender.
