Szechuan Beef

Amount Measure Ingredient -- Preparation Method

4 cups cooked rice -- of your choice

1 cup TVP chunks -- beef style

1 cup vegetable stock -- beef styke

1 large sweet potato -- cut in 1/2 " slices

2 tablespoons vegetable stock

2 tablespoons vegetable oil

1 tablespoon spicy sesame oil

1/4 cup brown rice flour -- or unbleached white flour

1 bunch bok choy

 

If no rice in supply, get it cooking.

 

Combine TVP and stock in a pot, bring to a boil, then let sit for 10 minutes.

 

Boil the sweet potato for 5 minutes only.

 

Mix the vegetable stock, oils, and flour in a bowl.

 

Toss in the TVP, ensure they are well coated.

 

In a steamer tray, place a layer of bok choy leaves on the botton, then a layer

of slightly boiled potatoes; top with TVP chunks. Steam for 20 minutes until

TVP and vegetables are tender.

 

Serve over cooked or steamed rice.
