Guest guest Posted November 27, 2001 Report Share Posted November 27, 2001 * Exported from MasterCook * Sweet Potatoes And Apples Recipe By : The Vegetarian Slow Cooker by Joanna White, page 70 Serving Size : 6 Preparation Time :0:00 Categories : Fruits Side Dishes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 1/2 pounds sweet potatoes or yams 1 pound tart apples (prefer Granny Smith or Pippin) 1 tablespoon fresh lemon juice 1/4 cup butter -- melted 1/2 cup honey 1/2 teaspoon salt 1/2 teaspoon cinnamon 1/4 teaspoon ground ginger 1/4 teaspoon nutmeg 1 pinch ground cloves Servings: 6 This very simple recipe is sweetened with honey. Serve with a crunchy green vegetable, carrot and cabbage slaw and a lemon dessert. Peel sweet potatoes and cut into 1/4 inch slices. Core and cut apples into 1/4 inch slices. Toss apples in a bowl with lemon juice to prevent discoloring. Place sweet potatoes and apples in the slow cooker. In a bowl, combine butter, honey, salt, cinnamon, ginger, nutmeg and cloves. Pour butter mixture into slow cooker and stir to coat potatoes and apples.
