Guest guest Posted November 27, 2001 Report Share Posted November 27, 2001 * Exported from MasterCook * Red Cabbage With Fruit And Onions Recipe By : The Vegetarian Slow Cooker by Joanna White, page 69 Serving Size : 4 Preparation Time :0:00 Categories : Fruits Side Dishes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup butter 1/2 cup chopped shallots 2 cups finely sliced onion (prefer sweet variety) 2 cups peeled thinly sliced tart apples (prefer Pippin or Granny Smith) 1 medium red cabbage -- thinly sliced 3/4 cup raspberry vinegar 1/2 cup sugar -- or more to taste salt and pepper -- to taste 2 cups fresh raspberries Servings: 4-6 Cabbage marries well with fruit. This recipe would go well with stuffed baked potatoes, a green vegetable and a chocolate dessert. If fresh raspberries are not available, use frozen. You may have to increase the sugar In a large skillet, melt butter and sauté shallots and onions for 5 minutes on medium, until onions are soft and beginning to brown. Transfer onion mixture to the slow cooker. Add apple, cabbage, vinegar, sugar, salt and pepper. Cover and cook on low heat for 6 to 7 hours. Add raspberries and cook for another 30 minutes.
