Creamy Red Bell Pepper Dip

2/3 cup sliced and roasted red bell peppers -- well drained

1/2 cup reduced-fat sour cream

1 small garlic cloves -- up to 2

2 tablespoons chopped fresh parsley

1/2 teaspoon lemon juice

1 dash salt

 

Makes about 1 cup.

 

In food processor, combine bell peppers, sour cream and garlic and puree

until bright colored and creamy. Stir in parsley, lemon juice and salt.
