Bleu Cheese Dip

Amount Measure Ingredient -- Preparation Method

1 cup nonfat cottage cheese

1/2 cup nonfat plain yogurt

1 garlic clove -- finely minced

3 ounces Maytag -- crumbled, divided

OR other bleu cheese

2 tablespoons chopped fresh chives

 

Makes about 1 1/2 cups.

 

In food processor or blender, puree cottage cheese, yogurt and garlic. Add

2/3 of the bleu cheese and process until creamy. Stir in chives and

remaining bleu cheese.

 

Nutrition information per serving: Calories 43, Carbohydrates 2 g, Protein

4 g, Fat 2 g, including sat. fat 1 g, Cholesterol 6 mg, Sodium 180 mg,

Calcium 69 mg, Dietary fiber 0 g. Diabetic exchanges per serving: 1/2
