Guest guest Posted November 25, 2001 Report Share Posted November 25, 2001 * Exported from MasterCook * Split Green Pea Soup with Tarragon Cream (Crockpot) Recipe By :Best Slow Cooker Recipes: Judith Finlayson Serving Size : 8 Preparation Time :0:00 Categories : Crockpot Soups And Stews Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup dried split green beans -- soaked, rinsed, drained 1 large onion -- chopped 2 cloves garlic -- chopped 3 celery stalks -- peeled, thinly sliced 4 sprigs tarragon 1 teaspoon salt -- or to taste 1/4 teaspoon freshly ground black pepper 6 cups vegetable stock _Tarragon Cream_ 1/4 cup whipping cream (substitute nonfat plain yogurt) 1/4 cup nonfat sour cream 1 tablespoon finely chopped tarragon 1. In slow cooker stoneware, combine peas, onion, garlic, celery, tarragon, salt, pepper and stock. Cover and cook until vegetables are tender: LOW 10 to 12 hours; HIGH 5 to 6 hours. 2. In a blender or food processor, puree soup in batches. Set aside. 3. TARRAGON CREAM: In a bowl, whisk cream until thick. Add sour cream and tarragon and blend well. 4. Ladle soup into individual bowls and garnish with Tarragon Cream. with cream: 252 Calories; 6g Fat (21.3% calories from fat) with yogurt: 231 Calories; 3g Fat (12.9% calories from fat) VARIATION: Split Green Pea Soup with Mint Cream (replace tarragon with fresh mint) MAKE AHEAD Cook soup overnight in slow cooker without adding the tarragon cream. Puree and refrigerate until ready to serve. In a pot, bring soup to a boil on stovetop and simmer 5 to 10 minutes. Proceed with steps 3 and 4.
