Guest guest Posted November 24, 2001 Report Share Posted November 24, 2001 * Exported from MasterCook * Tea-smoked Mushrooms Recipe By :Veggie Life, Winter 2001 Serving Size : 6 Preparation Time :0:00 Categories : Main Dishes Veggie Life / Winter 2001 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- SMOKING MIXTURE: 1/2 cup rice 1/2 cup firmly packed brown sugar 1/2 cup black tea leaves 4 cinnamon sticks 2 1/4 inch slices ginger root 1 tablespoon coriander seeds 1 bay leaf 1 teaspoon whole clove MUSHROOM MIXTURE: 1 pound assorted mushrooms, washed, dried and cut 4 cloves garlic, finely chopped 2 teaspoons olive oil 1 teaspoon reduced sodium soy sauce, or to taste Freshly ground black pepper -- to taste 1. In a mixing bowl, combine all smoking mixture ingredients. Line a wok with foil and mound smoking mixture in the center. 2. In a mixing bowl, combine mushrooms with garlic, oil, soy sauce, and black pepper. Toss lightly to coat. 3. Set a wire rack in the wok and place a tight-fitting lid on top. Heat wok over high heat until wisps of smoke begin to appear when lid is lifted, about 2 minutes. Reduce heat to medium. Quickly place mushrooms on rack and replace cover. Smoke about 10 minutes, until mushrooms are tender and juicy. Turn off heat and transfer mushrooms to a bowl. (Discard smoking mixture when cool.) Sprinkle with chopped chives or thinly sliced scallions. The slight smokiness enhances mushrooms in a most delightful way.
