Guest guest Posted November 22, 2001 Report Share Posted November 22, 2001 * Exported from MasterCook * Coconut Macaroons Recipe By :Rebecca Wood, Veggie Life, Winter 2001-2002 Serving Size : 0 Preparation Time :0:00 Categories : Desserts/Cookies Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups unsweetened shredded coconut 2/3 cup maple syrup or honey or a blend of barley malt and honey -- 2 2 tablespoons arrowroot or flour 1/8 teaspoon sea salt 3 large egg whites Cooking spray or oil Preheat oven to 350 degrees. Lightly spray or oil 2 baking sheets, or cover with parchment paper. In a large mixing bowl, combine coconut, sweetener, arrowroot, and salt. In a large bowl, using a whisk or electric mixer, beat egg whites to stiff peaks. Fold whites into coconut mixture. Drop heaping teaspoonsful onto prepared baking sheets, about 2 inches apart. Bake 10 minutes or until edges are lightly browned. Allow to cool before removing from sheet.
