Lace Wafers

Amount Measure Ingredient -- Preparation Method

1 1/2 cups rolled oats

1/4 cup unsweetened shredded coconut

1/2 teaspoon ground mace or nutmeg

1/4 teaspoon sea salt

1/4 cup melted butter

1/2 cup honey

1 large egg

1 teaspoon vanilla

Cooking spray or oil

 

Preheat oven to 350 degrees and lightly spray or oil 2 cookie sheets. In a

large mixing bowl, combine oats, coconut, mace, and salt. In another bowl,

combine butter, honey, egg, and vanilla. Add wet ingredients to dry

ingredients. Mix well.

 

Drop rounded teaspoonsful onto prepared baking sheets, about an inch apart.

Lightly oil fingers or bottom of a glass and press each cookie into a flat

2-inch wafer. Bake for 8 to 10 minutes, or until browned. Remove from oven and

allow cookies to cool on sheet for 2 minutes, until firm. Using a spatula,

transfer to a wire rack to cool.
