Mocha-Maple Carob Icing

Amount Measure Ingredient -- Preparation Method

1 cup smooth almond or cashew butter

6 tablespoons maple syrup

6 tablespoons roasted carob powder

1 tablespoon instant coffee powder, decaf, or Instant

Coffee substitute (such as Pero or Caffix)

2 teaspoons vanilla

1 teaspoon cinnamon

5 tablespoons up to 6 tablespoons soy milk or cream

 

In a food processor or blender, mix almond butter, maple syrup, carob and coffee

powders, vanilla, and cinnamon. Process until smooth. Blend in just enough soy

milk or cream to achieve a spreading consistency.

 

Yield:

" 1 1/2 cups "
