CARROT, SHIITAKE, AND SOYBEAN SAUTÉ

Amount Measure Ingredient -- Preparation Method

2 teaspoons arrowroot

2 tablespoons water

6 dried shiitake mushrooms

1 1/2 cups boiling water

1/2 cup vegetable stock

2 large carrots -- cut into 1/2-inch

pieces

1 cup diced onion

I tablespoon olive oil

2 cloves garlic -- minced

2 tablespoons minced ginger root

1 teaspoon soy sauce

114 teaspoon salt

1 1/2 cups shelled green soybeans -- thawed, if frozen

 

1. In a small bowl, combine arrowroot and 2 tablespoons water. Stir to mix

and set aside.

 

2. In a deep bowl, combine mushrooms and boiling water, set aside to soak

for 30 minutes.

 

3. Lift mushrooms from soaking liquid and squeeze gently over the bowl.

Discard mushroom stems and slice caps. Strain soaking liquid through a

paper coffee filter or very fine mesh strainer, into a medium bowl. Add

stock to mushroom liquid and set aside.

 

4. In a wok or large skillet over medium-high heat, sauté carrots and

onion in oil, until golden, about 7 minutes. Stir in stock mixture,

mushrooms, garlic, ginger, soy sauce, and salt. Bring to a simmer and stir

in soybeans. Return to a simmer and cook 5 minutes. Add arrowroot mixture

and cook about 30 seconds, stirring constantly, until liquid thickens

slightly.
