Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

2 tablespoons soy sauce

1/3 cup water

1 clove garlic -- finely chopped

3 tablespoons olive oil

4 4 oz patties tempeh

2/3 cup celery

1/3 cup Nayonaise

1 teaspoon salt

1/4 teaspoon white pepper

1/4 cup pecans or walnuts

12 pineapple rings -- fresh, if available

2 tablespoons maple syrup

12 slices whole grain raisin bread -- or other bread

Combine soy sauce, water, and chopped garlic. Let sit about 5 minutes.

Heat olive oil to medium high in a skillet. Fry patties until golden (5 minutes

one side and 3 minutes on other). When the second side is nearly done, add soy

mixture and cook until liquid has almost evaporated, then turn and allow other

side to absorb the remainder of the liquid. Continue cooking until patties are

slightly crispy.

Cube patties and combine with remaining ingredients (except bread) in a large

mixing bowl. Blend thoroughly.

Spread this mixture on bread. Cut in half diagonally and use toothpicks to

serve.
