Guest guest Posted November 20, 2001 Report Share Posted November 20, 2001 * Exported from MasterCook * French Onion Soup Recipe By : The Vegetarian Slow Cooker by Joanna White, page 50 Serving Size : 4 Preparation Time :0:00 Categories : Slow Cooker Soups And Stews Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 tablespoons olive oil 3 tablespoons butter 2 pounds onions -- sliced 4 medium tomatoes -- peeled seeded and diced 1/4 cup flour 1 teaspoon dry mustard 1 teaspoon salt 1/8 teaspoon white pepper 1/2 cup Sauternes wine 5 cups Vegetable Broth (see separate recipe) 1 loaf French bread 1 cup shredded Gruyere cheese 1/2 cup shredded Parmesan cheese -- up to 3/4 2 large eggs -- optional 1/4 cup port wine Servings: 4-6 This is a delicious, substantial soup that " wows " them every time. I like to make extra cheese bread to serve alongside. Heat olive oil and butter in a skillet on medium heat. Add onions and sauté for about 15 minutes, until onions begin to caramelize and turn brown. Add tomatoes, flour, mustard, salt and white pepper and cook for 1 minute. Add Sauternes and stir until mixture thickens. Pour mixture into the slow cooker. Add vegetable broth, cover and cook on low heat for 4 to 6 hours. Cut bread into 1/2-inch slices. Mix Gruyere and Parmesan cheese together and sprinkle on bread. Broil cheese bread until cheese browns slightly. Just before serving, beat eggs and mix with Port. Stir mixture into onion soup.
