Sloppy Joe's

Amount Measure Ingredient -- Preparation Method

1 1/2 cups TVP (ground beef-style)

1 1/4 cups vegetable stock -- beef-style

3 tablespoons olive oil

1 onion -- finely chopped

1/2 red bell pepper -- finely chopped

1 28 oz can crushed tomatoes

1 1/2 teaspoons sea salt

1/2 teaspoon pepper

 

Combine TVP and stock in a pan, bring to a boil and let sit 10 minutes.

 

In a saute pan, heat olive oil. Add onions and garlic, saute intil transparent

and lightly browned, about 2 minutes. Add bell pepper and saute for another 2

minutes. Add TVP, saute for 3-4 minutes on medium low heat. Add crushed

tomatoes, salt, and pepper. Simmer for about 15 minutes on medium low heat.

 

Serve over your favorite toasted hamburger buns.
