Vegetable Broth

2 tablespoons butter

6 carrots -- quartered

5 stalks celery -- quartered

4 medium onions -- quartered

1 teaspoon tomato paste

2 1/2 quarts cold water

1 teaspoon salt

4 peppercorns

 

Makes 2 quarts

 

Many of the recipes in this book use vegetable broth. You can buy canned

broth or make your own using this recipe. It is important that you strain

the vegetables soon after cooking, or the broth will take on a bitter flavor.

 

In a large skillet, heat butter on medium-high heat and cook carrots,

celery and onions until brown. Transfer to the slow cooker. Add tomato

paste, water, salt and peppercorns. Cover and cook on low heat for 7 to 9

hours. Taste and cook longer for additional flavor, if desired. Adjust

seasonings if desired. Strain mixture through a colander, discard

vegetables and refrigerate until ready to use.
