You can buy canned broth or make your own using this recipe. It is important that you strain the vegetables soon after cooking, or the broth will take on a bitter flavor. In a large skillet, heat butter on medium-high heat and cook carrots, celery and onions until brown. Transfer to the slow cooker. Add tomato paste, water, salt and peppercorns. Cover and cook on low heat for 7 to 9 hours. Taste and cook longer for additional flavor, if desired. Adjust seasonings if desired.
