Scrambled Soy Omelet

Amount Measure Ingredient -- Preparation Method

10 1/2 ounces firm tofu

3 tablespoons sesame oil

1/2 cup broccoli florets

1/2 cup cauliflower flowerets

1 red bell pepper -- chopped

4 green onions -- chopped

1 grated carrot

1 pint cherry tomatoes

1 teaspoon cayenne

1 teaspoon turmeric

1 teaspoon black pepper

1/2 cup low-fat cheese

 

Drain the tofu and mash into small pieces. Preheat broiler. On moderate heat,

add sesame oil to an ovenproof skillet. Add broccoli, caulifllower, and red

bell pepper, and lightly cook for 3 minutes. Add tofu together with some of the

green onions, the carrot, tomatoes, and spices. Add sufficient cayenne and

turmeric to give the tofu an attractive color. Season the top with the same

spices and remaining green onions to taste. Top with low-fat cheese and broil

until the cheese melts.
