Guest guest Posted November 17, 2001 Report Share Posted November 17, 2001 * Exported from MasterCook * No-Oil Granola Recipe By : The (Almost) No Fat Holiday Cookbook, by Grogan, page 179 Serving Size : 6 Preparation Time :0:00 Categories : Appetizers And Snacks Fruits Grains And Cereals Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups rolled oats or other flaked hot cereal 3/4 cup whole wheat flour OR other whole grain flour 1/2 cup wheat bran or other cereal bran 1/3 cup maple syrup or alternate syrup -- (not honey) 1/4 teaspoon coconut extract (or pure almond extract) 1/4 teaspoon salt 1/4 teaspoon ground cinnamon 1/2 cup dried fruit (optional for breakfast cereal) This makes a great substitute for nuts in baking, as well as a breakfast cereal. Try to use the coconut extract - it ends a very rich flavor to the granola. This small batch can be made very quickly and easily, with no fear of burning, in the microwave. Preheat the oven to 250F. Mix the ingredients together well with your hands, and spread the mixture onto a nonstick, lightly oiled or sprayed cookie sheet. Bake for 20 minutes, then stir the mixture every 5 minutes for the next 15-20 minutes to prevent burning. When the granola is lightly browned, it should be ready. Cool the granola thoroughly before storing in an airtight container. To cook in a microwave, cover the carousel of a large microwave with a layer of waxed paper. Spread the granola mix evenly over the waxed paper. Cook on HIGH for 3 minutes. Stir the granola and spread it out evenly again. Cook on HIGH 3 more minutes, then let stand 3 minutes before scraping it onto a cookie sheet to cool. You can add 1/2 c. dried fruit for breakfast cereal, if you wish.
