I've included it because some holiday pie and tart recipes just don't taste right with the Yeasted Pastry Dough. However, even with the pastry, one slice of the tart contains only 5 grams of fat because the filling contains no fat! This is a beautiful dessert as well as delicious, with a sparkling amber color. You'll be proud to serve it. This recipe first appeared in the November 1994 issue of Vegetarian Times. Line a 9 " tart pan or shallow pie pan with the pastry. (If using a pie pan, trim the pastry right at the inside top edge of the pan, not the outside edge.) Preheat the oven to 400F. In a small saucepan, mix together the maple syrup and water. Let it boil for 5 minutes. Whisk in the dissolved cornstarch, and continue to whisk over high heat until it becomes thick and clear. Stir in the vanilla and set aside. Sprinkle the granola over the bottom of the crust. Pour the maple syrup mixture over this, and spread it evenly. Place the tart in the center of the oven, and immediately reduce the heat to 350F. Bake for 30 minutes, then cool thoroughly on a rack before serving.
