Guest guest Posted November 16, 2001 Report Share Posted November 16, 2001 * Exported from MasterCook * Cranberry Sauce Recipe By : The (Almost) No Fat Holiday Cookbook, by Grogan, page 106 Serving Size : 10 Preparation Time :0:00 Categories : Fruits Sauces And Marinades Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 ounces fresh cranberries -- rinsed sorted and trimmed 1 cup cranberry juice cocktail OR a cranberry and fruit juice mix (like cran-apple or cranberry-raspberry) 1/2 cup sugar OR turbinado sugar or Sucanat I always like to make my own cranberry sauce instead of using canned, and it's one of the easiest parts of a holiday dinner to make, especially since it can be made several days ahead. Combine the ingredients in a large, heavy, non-aluminum saucepan, and bring to a boil. Turn the heat to medium, and cook about 10 minutes, or until the cranberries have popped open; skim off any foam. Cool and place the sauce in a serving dish. Cover and refrigerate until serving time. You may substitute 1 cup maple syrup for the sugar or add 1/2 teaspoon maple flavoring.
