Guest guest Posted November 16, 2001 Report Share Posted November 16, 2001 * Exported from MasterCook * Green Onion Mashed Potatoes Recipe By : The (Almost) No Fat Holiday Cookbook, by Grogan, page 105 Serving Size : 6 Preparation Time :0:00 Categories : Potatoes Side Dishes Soyfoods Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 medium russet potatoes -- peeled and cut into even chunks 1 cup plain soymilk (you can use reduced-fat but regular soymilk is a bit richer) OR 1 c. other non-dairy " milk " OR 1 c. Tofu Sour Cream (see separate recipe) 1 cup green onions -- minced salt and white pepper -- to taste I don't care how elegant the meal, I want mashed potatoes with my gravy. Without the green onions, this is a good, basic recipe to follow for making well-seasoned mashed potatoes without butter and milk or cream. Boil the potatoes in water to cover until tender. Drain them and mash in the pot. Beat in the soymilk (or alternate) and green onions, and season with salt and pepper to taste. Serve hot with Mushroom Gravy (see separate recipe) or other gravy. Leftovers are delicious made into little " cakes " and browned over medium heat in a heavy, lightly oiled or nonstick skillet.
