Winter Fruit Salad with Cranberry Mint Dressing

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

2 navel oranges -- peeled and sectioned

2 tangerines -- peeled and sectioned

2 grapefruit -- peeled and sectioned

sections cut in half

2 small bananas -- sliced

1/2 cup coarsely chopped dried apricots

1/2 cup toasted and coarsely chopped pecans

GARNISH:

6 mint leaves -- finely chopped

CRANBERRY MINT DRESSING:

1/2 cup cranberry sauce

2 tablespoons bourbon

2 tablespoons olive oil

1 tablespoon fresh lemon juice

 

Whisk together the cranberry sauce, bourbon, olive oil, and lemon juice.

 

In serving bowl, combine fruit with pecans. Toss fruit with dressing. Sprinkle

with mint leaves.
