Prepare 16 muffin cups. In small bowl, combine flour, baking powder and soda, salt and mace. In large bowl, beat eggs with cheese, milk, sugar, vanilla and oil for about 2 minutes. Add rice and flour mixture and stir until well blended. Pour into muffin tins and bake about 30 minutes, or until a cake tester comes out clean.
